BACON WRAPPED MEATLOAF

  Meatloaf. People either love it, or hate it. And I’m actually a bit weirded out that people don’t like it because it’s basically one big glorified meatball.
  I’ll just assume they haven’t had a really good meatloaf before. Like really good, which it what this is. Really, really good.

BACON WRAPPED MEATLOAF
-2 lbs ground beef
-3 eggs
-1/4 c dried minced onion
-1/4 tsp paprika
-1/2 tsp garlic powder
-1 1/2 tsp balsamic vinegar
– 1/2 c tomato sauce
-1/2 tsp dried parsley
-salt and pepper
– 3 strips bacon cooked and crumbled + enough (raw) pieces to cover top of meatloaf
– ketchup, to brush over loaf

-Preheat oven to 350°.
-While oven is preheating, cook up a few strips of bacon (I cut with cooking sheers 1st). Set aside and let cool.
-In a bowl add meat, spices, egg, and bacon. Mix around with your hands until  combined.
-Take a broiler pan and lay out your loaf.   Brush ketchup over loaf then top with strips of bacon.
– Cook for 45 min and let rest for about 5.

Enjoy with some BBQ sauce or just as is!
We served with sautéed white Russian kale and fingerling potatoes in garlic.

I usually have leftover meat and I make them into meatballs. Cook those for 20 min in a baking dish.
